5 Kinds Of Cookie Croissants You Can Make Right Now

The plain croissant might seem like a humble pastry. However, it is no easy feat to craft a flaky bread, delicately laminated with layers of butter, and ideal for a little espresso drink dipping. Additionally, while thrilling on its own, a butter croissant is a perfect canvas for constructing a delicious breakfast sandwich, testing out the viral bruléed crispy croissant, and as of recently, baking the trendy cookie croissant — “crookie” for short. If you’re on TikTok, you’ve probably seen the treat with Paris origins being remade on several accounts. Additionally, the “crookie” has recently appeared in bakeries across major metropolitan areas, including New York City, of course. For those who don’t have delightful pâtisseries within a few minutes, the croissant cookie is easy to make at home. Plus, many TikTok users have offered cookie croissant upgrades that are sure to make your mouth water. 

1. Classic Cookie Croissant

Of course, there’s nothing wrong with going traditional. Whether you make your own cookie dough or grab a pack of chocolate chip dough from Pillsbury, the process is easy. Slice your baked and cooled croissant in half, add raw dough to the middle, then fold it closed.

Top your croissant with the remaining pieces of dough. Then, bake your “crookie” at 350º F for 12 to 15 minutes, or until your cookie dough is golden on top. If you want to go the extra mile, sprinkle some powdered sugar on top and then thank Stéphane Louvard of Maison Louvard for originally crafting the now-viral pastry. 

2. Slutty Brownie Croissant 

For the sweet tooths out there, you can go wild with your chocolate flavors in the croissant. User @thedatenightkitchen expanded upon the “crookie” with the full flavors of “Slutty Brownies.” After slicing the croissant, TikTok foodie Jake Nathan added brownie batter into the middle. Then, Jake topped the croissant with both cookie dough and Oreos before baking. After following the original cookie croissant baking instructions, Jake had the most decadent dessert (or breakfast) ready to serve.

3. Sugar Cookie Croissant

Speaking of decadence, TikTok user @_gloyoyo_ not only made the “crookie,” she added a Pillsbury sugar cookie with a unicorn on top. (Frankly, we’re all about the sugar cookie upgrades.) But she didn’t stop there! After crafting a pastry with two types of cookie dough, she built out an ice cream sandwich with Jeni’s in the middle. This made us believe in magic, TBH. 

4. Crookie With Nutella

I am a certified chocolate lover. If you’re like me and think chocolate chip cookie dough needs more chocolate, add a layer of Nutella to your croissant with your raw cookie dough before baking. It’ll be warm and gooey in all the right way when you pull them out. 

5. Croissant Brownie

Of course, if you’re not about chocolate chip cookie dough, brownie batter is the next best thing. Make your own brownie batter at home or splurge on the fancy Ghirardelli brownie mix for a truly luxurious treat.
