Once school starts up again in September, our schedules often get so busy that we can’t even make time for a simple meal in the morning. This is a bad habit as I’m sure you’ve all heard plenty of times, breakfast is the most important meal of the day. Here is a list of easy breakfast recipes that you can either make the night before or quickly whip up in the morning right before school.
1. Gluten-free Vegan Breakfast Cookies
Who wouldn’t jump at the chance to have a cookie for breakfast while knowing you are consuming something nutritious at the same time? These breakfast cookies are packed with oats, flax seed, and banana which can all be found in a typical breakfast.
2. Veggie Quiche Muffins
Quiche and muffins are both breakfast staples but this recipe combines them both into one delicious bite. They can be made ahead of time, frozen, and then simply reheated whenever you are in the mood to have one of these for breakfast.
3. Chocolate Peanut Butter Overnight Oats
There’s nothing better than a breakfast that magically comes together while you sleep. The chocolate and peanut butter combination of these oats make it seem like you are having Reese’s for breakfast.
4. Avocado Toast
Avocado toast doesn’t have to cost you a house. It’s easy enough to make at home that anyone can do it and doesn’t take much time either. Making it yourself saves you both money and time on those busy mornings.
5. Omelette in a Mug
Not many students have enough time to whip up an omelette on the stove in the morning. Thankfully, it’s possible to make this delicious breakfast in the microwave. Simply mix all the ingredients together, put it in the microwave, and be on your way.
6. Mini Bagel Breakfast Sliders
The only thing better than one big bagel is three cute mini bagels. Smaller versions of a bagel mean you can have it more than one way at the same time. Bring these mini bagels with you to class and watch your classmates get jealous (you may have to share).
7. Waffle Breakfast Sandwich
This is not a breakfast sandwich that can be found in a McDonald’s drive-thru. The combination of jam, cream cheese, and crunchy waffle makes this breakfast so satisfying on those busy mornings.
8. Kale Breakfast Smoothie
Kale seems to be in everything these days so why not in your breakfast too? This smoothie is full of healthy ingredients to help you start the day off right. Plus it couldn’t be easier to make.
9. Cinnamon, Ginger & Brown Sugar-Baked Grapefruit
A baked grapefruit is something you would usually enjoy at Sunday brunch, but it is simple enough to make so that you can enjoy it on a regular basis as well. Barely any effort goes into making it but it provides a satisfying breakfast.
10. Loaded Peanut Butter Apple Slices
While it might just be easier to grab an apple on your way out the door in the morning, enjoying slices of apple with almond butter and other toppings is a much more filling breakfast. The almond butter gives you some much-needed protein to fuel your busy day.
11. Chia Seed Pudding
Chia seeds have so many health benefits and they taste amazing in pudding form. You may have already seen chia seed pudding as a dessert but it can also make a nutritious and delicious breakfast.
12. Breakfast Parfait
This is another quick and easy option that can be made the night before. You can customize the toppings to your preference, but the basics are normally yogurt, granola, and some kind of fruit.
13. Healthy Frozen Greek Yogurt Banana Poppers
This one is perfect for when the weather is still warm out because it’s almost like eating popsicles for breakfast. You get to have the knowledge that you are eating something healthy while still enjoying this creamy frozen treat for breakfast.
14. Smoothie Bowl
This breakfast almost seems too pretty to eat, and it’s loaded with fruit and flax seeds so it’s just as healthy as it is pretty. If you don’t think you have enough time in the morning to decorate a beautiful smoothie bowl, don’t worry because you can still have this smoothie in a to-go cup instead.
15. Chia and Flaxseed Microwave Oatmeal
Another seemingly time-consuming breakfast that can be made in the microwave is oatmeal. The use of a microwave to make this oatmeal means you can easily make it in your dorm before school. You’re also guaranteed to stay full until lunch with this hearty breakfast.
16. Healthy Breakfast Burrito
A burrito is an easy breakfast to carry when you’re on the go. This burrito has eggs and veggies making it seem almost like an omelette wrapped in a tortilla. The main difference is you can eat this with one hand while you can’t do the same with an omelette.
Given all these breakfast options you have, it doesn’t make sense to skip breakfast in the morning before school. With these quick and easy breakfast recipes, you have no excuse for leaving the house without a meal.
