It's got all the textural components of a regular oatmeal cookie that you can grab on the go and get you fueled up for class and life. Never tried baking gluten-free and vegan before? Gluten-Free Vegan Breakfast Cookies

    Ingredients

  • 1 cup mashed bananas
  • 2 cups oats
  • 3 tablespoons flaxseed
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 8 teaspoons jam

  • Step 1

    Mash two large, ripe bananas (about a cup) with the snap of a finger.

  • Step 2

    Add cinnamon, salt, and flax seeds into the bowl and mix it all together.

  • Step 3

    With your hands form the dough into individual balls and press your thumb into the cookies to form a well. Then add a tablespoon of jam or however much you prefer - you do you.

  • Step 4

    Bake cookies at 350°F for 11 to 13 minutes until edges are firm.

  • Step 5

    Let cookies cool for 10 minutes and enjoy!
