There’s absolutely nothing worse than reheating those leftovers from that great meal you had yesterday to find it’s already past its prime (looking at you, soggy french fries).
If you want to avoid this disappointment in the future, keep this list in mind the next time you browse a restaurant menu or cook a big meal so you can make the most out of your leftover food. Unlike that not so appetizing 3-week-old sandwich you keep saying you’ll eat “later,” these leftovers will give you something to look forward to:
1. Lasagna
As the dish that inspired this article, lasagna is a must on this list. Waiting a day or so gives lasagna the perfect amount of time to absorb the rich flavors of the sauce and hold a more firm form.
2. Chinese Takeout
It’s a blessing that takeout tastes so good the next day because who actually ever orders the right amount? Simply reheat your leftovers the next day, or if you’re feeling more adventurous, turn that takeout into a completely new dish with this recipe.
#SpoonTip: Add a fried egg or two to leftover rice to make a breakfast out of your takeout leftovers.
3. Chili
For as long as I can remember, my dad has participated in a chili cook-off every year (and has won 1st several times). All of his best chilis were made far in advance so all the spices and flavors had plenty of time to be absorbed.
4. Pizza
I’ll admit, it wasn’t until recently that I really started enjoying cold pizza. I’ve found that when you’re in the right mood, there’s hardly anything better. Oh yeah, you can also heat it up if you’re feeling really motivated.
5. Salsa
Salsa can also be pretty tricky because if you wait too long, the tomatoes can get soggy. However, if you give it just the right amount of time, the salsa gets a chance to absorb all those refreshing cilantro and onion flavors.
6. Meatloaf
Despite the bad rep it gets in school cafeterias, meatloaf can be dank, and even more dank the next day. I mean, what’s not to love about a giant meatball?
7. Tomato Sauce
If a sauce cools and is then reheated, water is lost into the air and the flavor of the sauce intensifies. So if you’re looking for a stronger, richer flavor, make sure to build in some time for this step in the process.
8. Sangria
According to my research, this one is up for debate. I personally think the fruity flavors combine more smoothly after you give them some time, but probably no more than 24 hours. No one likes soggy fruit.
#SpoonTip: Make sure to save the leftover fruit pieces for a boozy snack later.
9. Curry
The bold, rich flavors of any type of curry taste even better leftover because it lets the spices meld together. Pair it with some fresh naan, and you’re set.
10. All Thanksgiving Food
Last, but certainly not least, comes Thanksgiving food. Whether you want to recreate your Thanksgiving meal the next day or get creative with recipes like these, it always seems to taste better leftover. It’s the same delicious food, minus the family drama.
Like a fine wine, these foods get better with (a little) age. Not only will these leftovers save you some moolah, but eating them also helps reduce food waste, so go you. Just don’t forget to label your food with a date so you know it’s not too past its prime, and you should be good to go.
