If you have an early morning or late night class, the last thing you want to do is make food. JUST Egg understands that struggle and is here to help. The brand has created five easy mug meal recipes that are both quick, delicious and easy. Perfect for a college student on-the-go or for those who don’t feel like spending a fortune on a dining plan.

1. Burrito Mug

Ingredients:

-½ cup JUST Egg

-½ cup pinto or black beans

-2 Tbsp. shredded, plant-based cheese

-2-3 Tbsp. chunky salsa

-Garnish with tortilla chips & avocado

Directions:

1. Pour JUST Egg into a mug and microwave for 45 seconds.

2. Stir in cheese and beans with a fork.

3. Return to the microwave for 1 minute, or until all liquid is cooked through.

4. Fluff with a fork. Top with chunky salsa and avocado.

Scoop and eat with tortilla chips. 

2. Fried Rice Mug

Ingredients:

-½ cup JUST Egg

-¼ cup frozen peas

-¼ cup diced carrots

-¼ cup cooked rice

-1-2 tsp. soy sauce or tamari

-Garnish with green onions & sesame seeds

Directions:

1. Pour JUST Egg into a mug and microwave for 45 seconds.

Mix in peas, carrots, rice and soy sauce with a fork.

2. Return to the microwave for 1-2 minutes, or until all liquid is cooked through.

3. Stir and taste for soy sauce.

4. Garnish with sliced green onions. Enjoy!

3. California Omelet Mug

Ingredients:

-½ cup JUST Egg

-⅔ cup roasted potatoes, diced

-¼ cup bell peppers, diced

-1 Tbsp. sun-dried tomatoes, diced

-2 Tbsp. shredded, plant-based cheese

-Garnish with green onions & avocado (and tortilla chips for photo)

Directions:

1.  Pour JUST Egg into a mug and microwave for 45 seconds.

2. Mix in potatoes, bell peppers, sun-dried tomatoes and cheese with a fork.

3. Return to the microwave for 1 minute, or until all liquid is cooked through.

4. Stir and taste for salt and pepper.

5. Garnish with sliced green onions and avocado. Enjoy! 

4. Breakfast Bagel Mug

Ingredients:

-½ cup JUST Egg

-2 Tbsp. plant-based Swiss cheese, diced

-1 Tbsp. red onion, minced

-¼ cup cherry tomatoes, quartered

-1 tsp. Everything But The Bagel seasoning

-Garnish with bagel chips & fresh basil

Directions:

1. Pour JUST Egg into a mug and microwave for 45 seconds.

2. Stir in cheese and red onions with a fork.

3. Return to the microwave for 1 minute, or until all liquid is cooked through.

4. Fluff with a fork and mix in cherry tomatoes.

5. Garnish with EBTB seasoning and fresh basil. Enjoy! 

5. Banana Pancakes Mug

Ingredients:

-1 banana, mashed

-¼ cup JUST Egg

-¼ cup flour

-¼ tsp. baking powder

-1 tsp. maple syrup or honey

-¼ tsp. vanilla extract

-Garnish with chocolate chips & sliced banana

Directions:

1. Mash the banana in a large mug

2. Add the JUST Egg, flour, baking powder, maple syrup and vanilla. Mix thoroughly.

3. Microwave for 2-5 minutes, or until the middle is fluffy and batter cooked through.

4. Garnish with chocolate chips and sliced banana. Enjoy!
