Butternut Squash Soup Recipe

Try making delicious, homemade butternut squash soup. This recipe does not require a lot of ingredients or time, so it is a quick lunch that can be made during your busy college schedule! 

Soup is a staple of any meal to have while cozying up on the couch under a blanket with a scary movie playing on the TV. This exquisite orange soup fits right in with the Halloween theme and tastes amazing at the same time. 

Ingredients:

1 butternut squash

1 apple

1 carrot

1 onion

Garlic

Vegetable broth

Coconut milk (or half and half/heavy cream)

Seasonings: sage, cayenne, cinnamon, nutmeg, salt, black pepper)

Steps:

1. Chop up your ingredients.

2. Sauté the onions in a skillet until golden brown in color in some olive oil. Then add the garlic. Turn off the heat when the garlic becomes aromatic.

3. Put the other ingredients in a pot and add about 4 cups of broth. Add the seasonings except for sage. Cook until vegetables are tender. Then add in the onion, garlic, and coconut milk.

4. Use a blender to purée the soup until it’s smooth. I recommend doing it in sections. Add seasoning to your taste.

5. To plate, add sage on top to garnish and toast up your favorite bread.
