We all know that Ramen is the true love of any university student– ever. Its small package provides an easy meal for eating in a rush, watching your favourite movie, and is of course a go-to when hungover. But, what if we swapped out those packaged noodles and enjoyed our Ramen not as a quick snack, but as a delicious homemade meal!? Even if packaged ramen is your go-to, and working in the kitchen isn’t your scene, I’m challenging you to put down your ‘just add water’ meal this week and upgrade your ramen game!
This whole idea started when I ran out of packaged ramen. Sure I thought about going to the store and getting more– but after scrolling through my Instagram feed, I quickly gained some inspo and decided to make ramen myself!
I took to the internet and stumbled upon about a thousand recipes within seconds! With so many different flavours and kinds out there, it was hard to make a decision but in the end I went with a recipe taken form the food blog, A Couple Cooks. You can find the recipe linked to the blog’s title above. Or, you can follow their recipe below (included with a few of my own personal suggestions)– now for the fun part, lets upgrade your ramen game!
Easy At Home Ramen

Thinly slice and mince your garlic and ginger. Add both ingredients as well as 1 tablespoon of olive oil into a pot, and set at medium heat. Stir constantly for 1 minute, then add in 1 quart of vegetable broth and 3 tablespoons of soy sauce.
Next, thinly slice all of your vegetables putting everything aside except for your mushrooms which should be placed into the broth for five minutes. After five minutes add in the baby bok choy.
While your broth is heating, in a pot of boiling water add your noodles and cook until tender (approximately 2-3 minutes). During this time fill a saucepan with water and set to medium heat. Place your four eggs in the sauce pan and poach them to your preference (approximately 4 minutes to get a yolky egg).
Once your noodles and eggs are done, the meal is ready to be served! Divide the broth as well noodles into four separate bowls topping each with one poached egg, some sweet pepper, green onions, seaweed, and Sriracha (if you want added spice). Serve hot and enjoy!
