Vegan Avocado Brownies

The inner-Californian in me dies a little inside every time I throw an avocado away. After sacrificing too many mushy fallen soldiers, I made it a priority to put them to good use. Thankfully, I found a way to Hannah Montana the situation and get the best of both worlds. Oh, and did I mention, these are vegan brownies and actually healthy?

Vegan Avocado Brownies

Ingredients

Instructions

  1. Preheat oven to 350ºF.

  2. Grease or line baking pan with parchment paper.

    Combine dry ingredients (flour, sugar, cocoa powder, baking powder, and salt) in a mixing bowl and set aside.

    Beat together the mashed avocado, milk, water, and vanilla extract in another bowl.

    Add the dry ingredients and mix until well combined.

    Bake for 30-35 minutes, or until toothpick comes out clean.

I’m not endorsing eating brownies for dinner, but it would be a lie to say that I haven’t done it myself. Plus, these vegan brownies are made with love- and a little more guilt-free than something out of a box.
