This Citrus Beet Salad Is the Definition of ‘Superfood’

You’re probably sick of beet puns by now, and you’ve accepted that Schrute Farms isn’t real. Hopefully pop culture hasn’t completely ruined this vibrant veggie for you, because the health benefits of beets are no fad. If you’re a college kid on a budget seeking out affordable sources of vitamins and minerals that your body needs, beets are a reliable choice, and this beet salad recipe is a perfect dorm room dinner option. 

Packed with cancer-fighting antioxidants and rich in potassium, beta-carotene, iron, folate, manganese, and Vitamin C, this nutrient-dense root vegetable is clearly worthy of superfood status, and it’ll cost you less than $1 each. 

Healthy eating shouldn’t be complicated or expensive. All of the produce on this ingredient list can be eaten raw, which saves you time and preserves nutrients that may be depleted in the cooking process. Additionally, Whole Foods offers precooked grains that you can quickly reheat in the microwave, so you won’t need to rely on Sunday night meal prep to make this hassle-free dinner.

    Fill your bowl with spinach and arugula, and drizzle with olive oil or your preferred dressing. Mixing in the dressing before adding the other ingredients ensures that it is evenly distributed among the greens, and it helps you make a little drizzle go a long way.

    Tear open the 7 Grain u0026 Lentil Blend, and microwave it for 1 minute and 30 seconds (as per the instructions on the package).

    Cut the beet into thin slices. You can also use a grater if you prefer shredded beets, or, if you’re skeptical of raw beets altogether, you can steam or roast the slices in the oven for a softer consistency. Whichever style you choose, you don’t have to worry about removing the fiber-rich skin.

    Cut the orange and the avocado into slices, add all of the ingredients to the bowl, photograph your beautiful creation, send it to your mom, and dig in.
