These cookies, made from pie crust and apple filling and complete with a lattice top, are the perfect alternative to the traditional Thanksgiving dessert. They smell like apple pie, they look like apple pie, but they’re not apple pie—they’re something much better. Beware, though, these cookies tend to disappear within seconds so make sure you bake enough for everyone.
Caramel Apple Pie Cookies

Instructions
Lightly flour surface and roll out first crust.
Spread caramel sauce over the entire crust.
Spread finely chopped apple pie filling over the caramel crust.
Roll out the second crust.
Cut it into thin, even strips.
Layer half the strips one way and layer the other half on top the other direction creating a lattice top.
Using a cup or a cookie cutter, cut out circles.
Brush one beaten egg over the cut-out circles.
Combine sugar, cinnamon, and nutmeg in one bowl and mix together.
Sprinkle the sugar mixture over the cut-out cookie circles.
Place on a greased baking sheet and bake at 350°F for 25 minutes.
