I like this recipe because it sounds kind of complex, but it’s actually really simple and easy to make. I used to make it all the time in college when I wanted something that felt a little nicer but didn’t take a lot of effort. It’s also pretty affordable, especially if you get your salmon from somewhere like Trader Joe’s.
The marinade is super basic but really good. It’s just Dijon mustard, honey, soy sauce, and garlic, but it gives the salmon a really nice sweet and savory flavor. You can bake it in the oven or air fry it depending on what you have. I personally like my salmon very well done, so I usually cook it a little longer than most recipes say.
For the base, I usually make white rice. This is really easy, especially if you use frozen microwaveable rice, which is nice because you can just keep it in the freezer and use it whenever. Then I put the salmon over the rice and add toppings.
I usually go with green onions, edamame, and sesame seeds, but you can really do whatever you want. Sometimes I add spicy mayo too, which makes it even better.
Honey-Dijon Salmon Bowls
Ingredients
For Spicy Mayo
Instructions
- Preheat your oven to 400°F
- Mix the Dijon mustard, honey, soy sauce, and garlic in a small bowl. Or, you can add it directly on top of the salmon and rub it in to avoid more dishes.
- Put the salmon on a baking sheet lined with tin foil and coat it with the marinade.
- Bake for about 15-20 minutes depending on how you like it cooked.
- Make your rice (or microwave it if using frozen rice).
- Put the rice in a bowl, add the salmon on top, and add your toppings.
- Add spicy mayo if you want. You can make it with mayo and sriracha, or just buy premade spicy mayo!
Notes
- Any rice works, or you can switch it for something else like quinoa.
- You can cook the salmon longer if you like it more well done.
- Toppings are super customizable based on what you have. Avocado and cucumbers would also be good, for instance!
