Stay Cool With This Watermelon Cooler

Out with finals and in with summer jobs. Along with resume-building, summer means reuniting with high school homies, enjoying warm summer nights and sipping cool drinks by the pool. As a token flavor of summer, watermelon's sweetness appears in drinks, popsicles, candy and even salads.

Watermelon, which is 91 percent water, keeps you hydrated and reduces the risk of stroke since it's saturated with powerful antioxidants. This summer season fruit makes amazing frozen treats, can be used in a yummy salsa, and comes in over 1,200 varieties. And did you know it's the official state vegetable of Oklahoma?! Yes, I said vegetable. 

While dancing among the sparklers, sip on this Watermelon Cooler for a refreshing slush. You can use this recipe as a margarita mixer, a chaser for shots or to make alcoholic popsicles. With ingredients you probably already have in your kitchen, bring out your blender and fill a glass with this juice that young and old will love. 

Watermelon Cooler

Ingredients
  • 4 cups sliced seedless watermelon
  • 1 cup lemon sorbet
  • 1 lemon zested
  • 1 ½ cups cold water
  • 2 watermelon wedges
  • 1 handful fresh mint leaves
  • Optional: Popsicle molds
  • Optional: Vodka and tequila

Step 1

In a food processor or blender, blend watermelon, sorbet and lemon zest until very smooth.

Pour into a pitcher or jug. Stir in 1 ½ cups cold water; cover and refrigerate until cold.

Serve over ice and garnish with watermelon wedges and mint.

Optional: Pour into popsicle molds. Add mint, pop rocks or gummies to make pop'n popsicles.
