In a food processor or blender, blend watermelon, sorbet and lemon zest until very smooth.
Pour into a pitcher or jug. Stir in 1 ½ cups cold water; cover and refrigerate until cold.
Serve over ice and garnish with watermelon wedges and mint.
Optional: Pour into popsicle molds. Add mint, pop rocks or gummies to make pop’n popsicles.
