Inside Out Vegan Peanut Butter Cups With Avocado Fudge

Inside out peanut butter cups?! It boggles the mind, defies the senses, and flips everything you’ve known and loved about a peanut butter cup on its head. And they can be yours with just a few ingredients and a little prep work.

With only 4 ingredients, these are a delicious healthier indulgence, full of better-for-you fats from the nut butter, avocado, and dark chocolate, making a satisfying, indulgent treat that won’t make you feel like garbage.

If you don’t want to make avocado fudge, you can substitute a natural chocolate hazelnut spread or even Nutella, all with delicious results. You can also swap peanut butter for almond, sunflower, or cashew butter. Make them however you like – just be sure to invite us over to taste test.

    In a microwave safe bowl, melt coconut oil, about 30 seconds. Add peanut butter and stir coconut oil into peanut butter until well combined.

    Spoon a small amount peanut butter mixture, filling about 1/2 way up the liner, into mini cupcake liners or cupcake liners, depending on your desired size.

  3. Place cups in the freezer for 10-15 minutes, until hardened.

    Meanwhile, make fudge: melt chocolate in a microwave safe bowl, about 1-3 minutes. Peel and mash avocado, add to chocolate, and stir until well combined.

    Remove cups from freezer. Dollop a small amount of fudge (or chocolate hazelnut spread) on top of the peanut butter layer.

    Stir remaining peanut butter mixture (you may need to reheat it a bit in the microwave, about 30 seconds) and fill each cup to the top. Place in the freezer again until hardened, about 45-60 minutes.

    Enjoy as a snack or on top of ice cream. Store in the freezer.
