When you think of oatmeal, it’s usually topped with blueberries and strawberries and sweetened with honey or brown sugar. But oats don’t have to be sweet. Oats are a blank canvas, like rice or grits. You can practically turn them into any style of dish you want, including savory oats. They can be cheesy, include vegetables, and even imitate chili.

if you’re like me and love a good savory breakfast, these oatmeal recipes are a must try. Push aside your bacon and eggs and get ready for these savory oats.

My first recipe for fall-inspired oats was inspired by this Brussel Sprouts and Sweet Potato Overnight Oats with Pancetta and Tahini recipe. I changed it up to my liking- and it turned out really good.

The second recipe is for cheesy oats with egg white. As a cheese and egg lover, this recipe was absolutely delicious. You can switch it up to your liking by changing the protein from bacon to sausage or using different greens. This recipe serves more as a blueprint for your taste. 

And the last recipe for chili oats was inspired by this vegan, no salt, gluten, sugar, or oil recipe. However I switched up some things because I am not vegan and I enjoy salt.

Fall-Inspired Savory Oats

    Ingredients

  • 1/2 cup steel cut oats
  • 1 cup organic bone broth I used chicken
  • 1 small sweet potato cubed
  • 1 cup Brussel sprouts halved
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon minced garlic
  • Pinch salt
  • Handful kale

  • Step 1

    Preheat your oven (or airfryer) to 400° F. Combine sweet potatoes, Brussel sprouts, black pepper, pinch of salt, and oil in a medium-sized bowl. Toss to coat. Spread evenly on a sheet and cook for 30 minutes. Toss once halfway through.

  • Step 2

    Mix bone broth, salt, and oats together in a small pot and cook for 10 minutes on low heat, stirring occasionally or until desired consistency.

  • Step 3

    While this is cooking, put a pan on medium heat with some olive oil. Once heated, add your garlic. After 2 minutes, add your desired amount of kale (or any other green) and salt. Cover and cook until tender. Add all of the ingredients into a bowl with toppings. Enjoy!

Cheesy Oats With Egg Whites

    Ingredients

  • 1 cup steel cut oats
  • 1 cup bone broth I used chicken
  • 3 tablespoons Mexican blend cheese
  • Half an avocado
  • Handful kale
  • 1 tablespoon bacon bits
  • 2-3 egg whites
  • Pinch salt
  • 1 teaspoon black pepper
  • 1 teaspoon green goddess herbs dill mint and/or basil
  • 3 tablespoons bell peppers chopped
  • Sriracha to taste

  • Step 1

    Mix bone broth, salt, and oats together in a small pot and cook for 10 minutes on low heat. Add cheese and stir occasionally. Put the pan on medium heat, add onion and saute for 2 minutes, stirring occasionally. Add bell peppers, salt, green goddess herbs, and black pepper. Cook for another 2-3 minutes. Add your egg whites, and cover the pan with a lid. Flip when ready and then add cheese. Let sit for another minute.

  • Step 2

    While this is cooking, place another pan over medium heat with some olive oil. Add your garlic and cook for 2 minutes. Add your kale and season with salt. Cover and cook until tender. Add your cheesy oats in a bowl, add the eggs, kale, avocado, extra cheese, and any desired toppings, like sriracha. Enjoy!

Black Bean Chili Oats

    Ingredients

  • 1 cup diced onion
  • 1 teaspoon minced garlic
  • 1 cup steel cut oats
  • 1 cup bone broth
  • 1 cup diced fire roasted tomatoes
  • 1 can black beans drained and rinsed
  • 2 tablespoons diced green chilis
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • 1 cup kale or any desired green
  • Pepper Jack cheese
  • 1 lime optional
  • Fresh cilantro leaves optional
  • Avocado optional

  • Step 1

    Add everything except for the lime juice, avocado, and cilantro to a pot over medium heat. Bring the mixture to a boil, and then reduce to low so that you don’t see any bubbling in the pot. Set your timer for 10 minutes and allow to simmer uncovered, stirring frequently to make sure nothing sticks at the bottom. After 10 minutes, add lime juice and let sit for another minute. Add the chili into a bowl with any toppings you want. Enjoy!
