The following excerpt and recipe for a Tailgate Tray is from Frances Largeman-Roth’s new cookbook “Everyday SnackTray,” available now on Amazon.
If you’re a fan of chicken wings, feel free to add them to this tray. And if you end up serving regular and vegan blue cheese dressing, just add a little sign to designate which is which.
• Buffalo Cauliflower Bites (featured recipe below)
• Blue cheese dressing
• Stuffed mushrooms
• Pizza, cut into small wedges
• Cucumber spears
• Cherry tomatoes
• Baby bell peppers
• Baby carrots
• Hummus or other bean dip
• Potato and/or tortilla chips
• Mini peanut butter cups
• Yogurt-covered pretzels or yogurt-covered almonds
• M&M’s in the colors of your favorite team (Yes, I’m a Bills fan!)
Even if you love chicken wings, I encourage you to give these vegan cauliflower bites ago. They have the same satisfying flavor as wings, without the chicken or the mess.
Buffalo Cauliflower Bites
Ingredients
Instructions
Preheat oven to 425°F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, paprika, garlic powder, salt, and milk. Add the cauliflower florets and toss to coat.
Transfer the cauliflower to the baking sheet and bake 20 minutes, flipping halfway through.
Remove the baking sheet from the oven and brush cauliflower with the buffalo sauce. Return to the oven for 15 minutes, or until the florets are tender and the edges have darkened. Place cauliflower bites on your tray and enjoy!
