Instead of grabbing that same generic granola bar every morning as you rush to your morning class, start the year off right with these easy no-bake breakfast cookies. 

Don't worry, with this recipe you won't even be breaking that eat healthy" New Year's resolution–that's the best part. Breakfast is the most important meal of the day, so let's do it right. These cookies are simple, fast, and don't require complicated ingredients–score.

No-Bake Breakfast Cookies

    Ingredients

  • 1/2 cup peanut butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup Rice Krispies cereal
  • 1/4 cup flaxseed
  • 1/2 cup oats old-fashioned oats or quick oats
  • 3 tablespoons chocolate chips milk or dark chocolate
  • 2 tablespoons Craisins

  • Step 1

    In a microwavable bowl, combine the peanut butter, honey, and vanilla. Microwave for 20 seconds, then stir ingredients together.

    Add the Rice Krispies cereal, flaxseed, and oats into the same bowl. Stir until all of the ingredients are mixed well.

    Now for the sweet part you've been waiting for: Add chocolate chips and Craisins and mix. (You can also add in other ingredients like nuts or raisins to add flavor to your cookies).

    Allowing the mixture to chill in the fridge for at least 20 minutes will make this next step much easier. After the 20 minutes, form the mixture into balls using your hands, and then flatten them to give them that round cookie shape.

  • Step 5

    This elegant (or if you're craving a little more chocolate), melt about 3 tablespoons of chocolate chips. Transfer the melted chocolate into a sealable bag, then cut a small hole in the corner of the bag. Drizzle away.
