These 5-Ingredient Quiche Cups Make Meal Prep a Breeze

Meal prep is a breeze when it comes to quiche, yes, quiche. It sounds daunting, but I promise anyone can make it. These mini quiche cups are a great option for a healthy pre-made meal, because eggs are a staple in the kitchen and are interchangeable with any vegetables lying around in the fridge. I like adding diced ham and plain Greek yogurt with goat cheese to make them extra creamy and tangy. They’re tasty served hot or cold for fuel on the go.

    Preheat the oven to 375°F and line 12 muffin tins with foil liners.

    Whisk together the eggs, salt and pepper, cheese, and yogurt. Throw in the diced ham and blanched (or steamed) diced green beans.

    Evenly distribute the mixture into foil liners and bake for 20 to 23 minutes.
