Remi Cruz’s Cheesy Microwave Nachos

Whenever I come home after a night out, I have to eat. And whatever I eat, it has to be quick. I’m a hungry little monster that will gobble down everything in site if I don’t have a plan.

And what’s a quicker meal than cheesy microwave nachos? It comes together in minutes, only requires me to press buttons on a microwave (the only appliance I should be using), and allows me to snack on shredded cheese while I wait. As part of her YouTube series Drunchies, Remi Cruz shared her go-to late-night snack with Spoon. These easy cooking videos are all about making food when you’ve had a little too much to drink.

    Pour chips onto a microwave-safe plate and pile on the shredded cheese. Pop it in the microwave and cook until the cheese is melty and delicious (about a minute or two). Depending how much you’ve been drinking, feel free to just eat them at this point, but if you’re up for it, move on to the guac in step 2.

    I wouldn’t encourage you to handle any sharp objects while intoxicated, so let’s pretend you prepped your fresh avocado, chopped your red onion, and diced your tomatoes ahead of time. In a medium bowl, mash up the avocado. Then mix in the onion, tomato, cilantro, and a squeeze of fresh lime juice. Season to taste. Scoop your guac onto your nachos, along with some sour cream and jalapeno slices. Proceed to stuff your face, drink some water, and go to bed.
