Spoon Bulldogs’ Recipe of the Month: Chicken Cutlets 3 Ways

Here at Bryant, we Spoonies like to learn new recipes every month that help us practice some kitchen basics. Last month, we did a Chopped Challenge to learn quick-thinking skills, collaboration in the kitchen, and to have some friendly competition. This month, we wanted to focus on a cooking basic: the chicken cutlet. We learned how to prepare, bread, and cook a basic cutlet. Then we dressed them up in three popular ways!

Breaded Chicken Cutlets

    Preheat oven to 375°. Set up your dredging station: Put the flour in one bowl and season with pepper and garlic powder, probably about a teaspoon of each, or as much or as little as you like.

    In a second bowl, scramble 2 eggs.

    In a third bowl, add the breadcrumbs and grated Parmesan cheese. Mix until evenly distributed.

    Prepare the chicken breasts. Carefully split the breasts in two by putting one breast on a cutting board. Cut the chicken breast in half horizontally through the middle so that you end up with two thin halves. Repeat will every whole breast until you have 8 halves.

    Take one split breast piece and coat it in the flour blend. Shake off the excess flour. Then dunk each split chicken breast, one at a time, in the egg wash until fully covered. Shake off the excess egg. Then coat the chicken in the breadcrumb blend evenly. Shake off excess.

    In a pan, add oil until it is about 1/2 inch up the side of the pan. Heat over medium-high heat. Once that is hot enough to fry, add 2 breaded chickens. Let if fry for about 2 minutes on each side. Flip when golden brown.

    Remove chicken from the pan after 2 minutes on each side. The chicken will still be raw in the middle at this point. Put the finished pieces on a paper towel lined plate and blot excess oil.

    When all of the cutlets are done, put them in a pan and then into the oven to finish cooking. This should take about 15 minutes, but could vary depending on the thickness.

Chicken Parmesan

    Preheat oven to 375. Line up the breaded chicken cutlets on a baking pan. Cover them evenly in sauce. Place one slice of cheese on each cutlet.

    Sprinkle with Italian seasoning and Parmesan cheese. Bake for about 10 minutes or until cheese is bubbly and melted evenly.

Quick Chicken Cordon Bleu

    Preheat the oven to 375. Line up the cooked chicken cutlets on a baking sheet. Coat the top of each chicken cutlet in as much or as little Dijon mustard as you would like. We did about a tablespoon on each.

    Add a slice of ham on top of eat Dijon-coated cutlet. Add a slice of the cheese on top of each slice of ham. Bake for about 10 minutes, or until cheese is bubbly and evenly melted.

Quick Chicken Piccata

    In a sauce pan over medium heat, melt the stick of butter. Once the butter is melted, combine the chicken broth or white wine with the juice of one lemon and the capers plus a little bit of the caper juice to taste. Stir occasionally at a simmer for about 5 minutes.

  2. Lisa Russo

    Cut each chicken cutlet into 4 equal pieces. Add the chicken to the sauce and let it cook for about 10-15 minutes, or until the sauce reduces slightly and the chicken is fully heated through.
