It’s quick and doesn’t require all the crazy equipment that the professionals use. This recipe only requires essential kitchen equipment like a stove, an oven, measuring tools, bowls, trays, and a rubber spatula. These bagels are the perfect quick and easy breakfast or snack for college students this fall season.

In a microwave safe bowl, heat 1/2 cup of water for 30 seconds. Add granulated sugar and mix it in until it dissolves. Then add the dry active yeast. Let this mixture sit for 5 minutes.
While yeast is activating, combine 3 1/2 cups of flour, all of the salt, cloves, cinnamon, nutmeg, and pumpkin spice as listed above. Depending on humidity, you may need another 1/2 cup of flour later on to make the dough more workable. Combine all the dry ingredients, then form a well (a small hole) in the center of the dry ingredients.
After five minutes have passed and the yeast has become foamy, add the other 1/2 of warm water to the wet ingredients. Then add the pumpkin puree and mix well.

Add the wet ingredients to the dry ingredients and mix until combined. If the dough is too wet and sticky to work with, add more flour until the dough doesn’t stick to the sides of the bowl or your hands anymore.
Knead the dough in the bowl until the dough becomes a single workable blob, then plop it down on a clean surface. You may need to flour the surface if it is humid and the dough is sticking to the surface. Knead the dough for at least 10 minutes or until the dough texture resembles clay. Then put back the dough in a large bowl and cover to let it rise for an hour in a warm area. While dough rises, prepare large pot of water to boil bagels in and preheat oven to 450°F.
Punch down the risen dough and place on flat surface. Shape out dough into about seven plump balls. Punch your thumb through the center and shape each ball into a bagel.
Use a pair of tongs to drop the bagels in boiling water for one minute each. After a minute has passed, use the tongs to gently place the bagels on a parchment lined tray.
Sprinkle a generous amount of brown sugar and cinnamon onto each bagel. Place the tray on the center rack of the oven and bake for about 11 minutes or until golden brown. Allow to cool, then enjoy as is or with topping of your choice.
