How to Make Mexican-Style Street Corn on the Cob (Elotes)

From Mexico to Smorgasbord, NYC, elotes can be found all over. This Mexican-style corn on the cob, also known as elotes, is a popular street food that you can now make at home.

    Boil or steam your corn. While your corn is cooking, grate some fresh Parmesan into a bowl.

    Once your corn is fully cooked, skewer it and slather on some mayo. (If you hate mayonnaise you can use sour cream.)

    Hold the corn over a plate and thoroughly cover it with the grated cheese. Traditionally, elotes are made with Cojita cheese but that can be hard to come by.

    Last, sprinkle on some seasonings to taste. Traditional seasoning would be chili powder with a squeeze of lime but Cajun seasoning works really well, too.

    Sprinkle on some seasonings such as salt or pepper and enjoy!
