The inner-Californian in me dies a little inside every time I throw an avocado away. After sacrificing too many mushy fallen soldiers, I made it a priority to put them to good use. Thankfully, I found a way to Hannah Montana the situation and get the best of both worlds. Oh, and did I mention, these are vegan brownies and actually healthy?

Vegan Avocado Brownies

    Ingredients

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup mashed avocado
  • 1/2 cup soy or coconut milk
  • 1/3 cup water
  • 1 teaspoon vanilla extract

  • Step 1

    Preheat oven to 350ºF.

  • Step 2

    Grease or line baking pan with parchment paper.

  • Step 3

    Combine dry ingredients (flour, sugar, cocoa powder, baking powder, and salt) in a mixing bowl and set aside.

    Beat together the mashed avocado, milk, water, and vanilla extract in another bowl.

    Add the dry ingredients and mix until well combined.

    Bake for 30-35 minutes, or until toothpick comes out clean.

I'm not endorsing eating brownies for dinner, but it would be a lie to say that I haven't done it myself. Plus, these vegan brownies are made with love- and a little more guilt-free than something out of a box.
