These Lucky Charms Pancakes Are the Ultimate St. Paddy’s Day Breakfast

Should you choose to celebrate like the Irish this year, drinking on an empty stomach is always a bad idea. When starting early, a filling breakfast is key to making sure the mid-afternoon hangover doesn’t hit you too hard (remember it’s a marathon, not a sprint).

Buttermilk pancakes are easy to make, and my go-to breakfast when hosting a large group of people. Adding just a little bit of green food coloring and topping with some Lucky Charms marshmallows makes these St. Patrick’s Day Lucky Charms Pancakes a fun and festive spin on a classic breakfast.

Having learned from my sudden death due to not enough breakfast, and more than enough Jell-O shots on the morning of my first year St. Patrick’s day experience, this time around I’ll be going hard in the kitchen before I do at the party. 

Lucky Charm Buttermilk Pancakes

    Add all dry ingredients together in a bowl and mix.

    In a separate bowl, add all wet ingredients and whisk until well beaten.

    Combine the wet and dry ingredients, pouring the wet into the dry bowl and again whisking until fully combined. Add in 1-2 drops of green food colouring as you mix, until desired colour is achieved.

    Turn burner on medium to high, then moisten a large pan or griddle with oil or butter. Pour roughly a 1/2 cup of batter per pancake onto the pan, and cook until bubbles begin to appear. Flip with a spatula and leave until cooked evenly on both sides.

    Top your pancakes with the desired amount of whipped cream, maple syrup, and Lucky Charm marshmallows.
