Key lime pie is one of my all time favorite desserts. However, for the longest time I never ate it because I knew it was full of milk and other dairy ingredients. One day, I decided I would use my baking skills to try to recreate this awesome dessert into a sort of mock vegan key lime pie.
I can assure you that this is a super simple recipe and the result is a vegan dessert that tastes not just like key lime pie, but exactly like key lime pie.

Preheat the oven to 350 °F and then add graham cracker crumbs to a bowl. Melt the coconut oil for 20 seconds and pour over the crumbs. Stir until all of the mixture is moist.
Scoop out the crumbs and add to a mini tin. Push down until the crumbs are flattened and surround the bottom and sides of the tin. Bake for 2-3 minutes until slightly golden brown.
Over the stove top on medium heat, add sugar, cream of coconut, coconut milk, corn starch, and key lime juice. Stir until thick (about 8 minutes).
Cool the filling for 2 minutes and then pour over the crust. Cool for another 15 minutes.
This recipe is absolutely a substitution miracle. Regular key lime pie contains sweetened condensed milk and egg yolks. However, to make this recipe completely vegan, I made the filling like a pudding without eggs. I love how easy this recipe is and that it requires no time in the oven, other than the crust.
The consistency is thin like real key lime pie, it has that same tart yet sweet flavor, and it cools thick and sturdy. Not to mention the graham cracker crust is a classic and is so easy to make with melted coconut oil.
Since I am the only one in my family who really likes this dessert, I made a mini version. With some type of mini square dishes, you can make two mini key lime pies with this recipe.
This is great because having an entire pie is not always practical and you can end up wasting ingredients. I garnished the pie with a spoon full of Fluff and a sprinkle of sugar because key lime pie usually comes with whipped cream. You could also do vegan ice cream on top for a flare.
It is best when there is a hint of sweetness on top because it is pretty tart. Thanks to things like cream of coconut and corn starch, vegans can enjoy this creamy delicious dessert again.
