Cookie Recipes to Make this Holiday Season

After finals and studying, what better way to de-stress than baking some crafty holiday cookie recipes? Wow your family with these creative desserts meant to be shared with the ones you love this Christmas season. 

Crinkle Cookies:

·1 cup unsweetened cocoa powder

· 1 tsp instant espresso powder (optional)

· 2 cups sugar

· 1/2 cup canola oil

· 4 eggs room temperature

· 2 tsp vanilla

· 2 cups flour

· 2 tsp baking powder 

· 1/2 tsp salt

· 1 cup mini semisweet chocolate chips

· 1/2 – 1 cup powdered sugar

Directions

Mix together the cocoa, espresso, sugar, and oil. Beat eggs in one at a time, then add vanilla. Combine dry ingredients in separate bowl and add to other mixture. Fold in chocolate chips. Allow dough to chill for at least 4 hours, roll dough into balls and coat in powdered sugar. Bake for 10-12 minutes at 350 degrees. 

Peppermint Mocha Cookies

· 1 stick softened unsalted butter

· 1/2 cup granulated sugar

· 1/2 cup brown sugar

· 1 large egg

· 1 tsp vanilla and peppermint extract

· 1 cup flour

· 1/2 cup and 2 tbsp cocoa powder

· 1 tsp baking soda

· 2 tsp espresso powder

· 1 cup chcolate chips

· 8 ounces white chocolate

· 3 large candy canes crushed

Directions

Beat butter with sugars until light and fluffy. Add egg and extracts. Combine dry ingredients in separate bowl and slowly add mixture to wet ingredients. Add in chocolate chips and chill for at least 3 hours. Bake cookies for 8-9 minutes at 350 degrees. Decorate with melted white chocolate and crushed candy canes.

Grinch Cookies 

· 1 box dry vanilla cake mix

· 1/2 cup vegetable oil

· 2 eggs

· green food coloring 

· powdered sugar and heart sprinkles to decorate

Directions

Combine all ingredients except for decorations. Roll balls of cookie dough into powdered sugar. Press 1 small heart into the center of each cookie. Bake for 8-10 minutes at 350 degrees
