This Tahini Maple Toast with Pan-Fried Banana is Gourmet AF

Oreo pancakes. Pumpkin cheesecake french toast. Sometimes you wake up and just feel like #treatingyoself to a fancy breakfast. I’m usually too lazy in the mornings to make anything except my usual smoothie bowl, but when I want to get fancy, then this tahini maple toast is my go-to. It’s vegan, ready in less than 15 minutes, and tastes like the cinnamon toast crunch cereal of your childhood. Set down the avocado roses and pick up the tahini; there’s a new toast in town.

Tahini Maple Toast with Pan-Fried Banana

    In a small bowl, mix tahini, syrup, and cinnamon. Slowly add hot water until a spreadable sauce forms. Set aside.

    Using a sharp knife, roughly chop the macadamia nuts into slivers. Set aside.

    Using the same knife, cut the banana in half crosswise.

    Cut the banana in half lengthwise, forming four segments.

    In a medium-sized pan, melt the margarine over medium-high heat. Add the banana segments and fry until both sides of the banana have browned.

    Toast slices of bread.

    Spread a thin layer of tahini-maple sauce over each slice of toast.

    Add the fried banana and macadamia nuts.

    Sprinkle with desired toppings (e.g. ginger, chocolate chips, shaved coconut, more cinnamon), then serve immediately.

You’ll have some leftover spread, which is good because you’ll want to make this tahini-maple toast again. And again. And again. Addiction doesn’t begin to cover how I feel about this toast. Enjoy it for breakfast, as a snack, or as a healthy dessert after dinner.
