It’s 3 pm and your stomach is growling. Here’s how to make a portable snack that’s tastier, cheaper, and healthier than the granola bar with just two ingredients.
This banana and oatmeal based recipe pairs well when baked with dried fruit, nuts, chia seeds, or chocolate chips.
You can also add other ingredients of your choice into the mix to taste or on top for decoration.

Obtain your ingredients. You can play around with the 1:1 banana to oatmeal ratio depending on how many cookies you wish to make.
Mash everything you want baked with your hands or a masher of your choice.
Mash until everything is evenly distributed – your hands are the best tool to do the job. (Watch out for the dough sticking to your hands.)
Shape dough into balls, animals, breakfast bars – whatever you please as long as they’re at least 1 cm thick. These cookies don’t expand, so feel free to place the dough closer together than your average mix.
Bake for 10-15 minutes at 350°F. I suggest using a nonstick foil, so you don’t have to use any extra oil.
Decoration time! You can use anything you want, but I use Trader Joe’s O’s, blanched peanuts, chia seeds, and blueberry jam.
