Simply Refreshing Strawberry-Basil Cool Whip Sandwich

With the weather getting nicer and the stress of finals quickly approaching, finding the motivation to study is getting harder and harder. Unfortunately, we still have to hang in there until the end of the semester, which means focusing on our work and not day dreaming about relaxing on the beach. I know, I know it’s not easy, but this Strawberry-Basil Cool Whip Sandwich, inspired by Alida’s Kitchen, is sure to be the perfect study break snack.

With only 50 calories, these treats are the remedy to any overwhelming study moment on a hot day. And not only are fresh strawberries always amazing, but the added fresh basil brings another refreshing flavor to the mix, making a perfect match to ease any stress (or at least temporarily while you take a break while eating it). 

Strawberry-Basil COOL WHIP Sandwich

    Wash the strawberries and basil and then dice the strawberries and chop the basil leaves (about 2-3 leaves depending on the size).

    In a bowl, add the cool whip, strawberries, and basil. Mix them together

    Take a sheet of foil and split it in half so that it is rectangular. The graham crackers are relatively small so a big piece is unnecessary. Then, split a graham cracker sheet in half and lay out the two halves on the foil.

    Using a spoon, put equal amounts of the COOL WHIP mixture on top of one of the graham crackers. Then top it off with the other graham cracker to create a sandwich.

    Wrap up the sandwich in foil and stick it in the freezer for at least 30 minutes or until the COOL WHIP has set.

Not only is this COOL WHIP sandwich perfect with strawberry-basil, but there are so many other fruit combinations that work well with it, like blueberry-mint and apple-cinnamon.
