Whether you are paleo or not, these chewy chocolate chip cookies are sure to satisfy your sweet tooth. This healthy twist on the classic chocolate chip cookie will leave you wanting handfuls (especially when they’re warm out of the oven).

Preheat the oven to 350° F. Beat together the coconut oil and coconut sugar until smooth.
Add the egg and vanilla to the mix and beat together until smooth.
Add the almond flour, salt and baking soda to the wet ingredients. Mix until well incorporated and the mix becomes a dough.
Fold in the chocolate chunks and cover the mixture with plastic wrap and refrigerate for at least one hour (the dough can be prepared up to 48 hours ahead of time).
After refrigeration, use a cookie scoop to form cookies and press down slightly.
Bake for 10 minutes, or until the edges turn golden brown.
