These Avocado Egg Bowls Are an Easy Way to Start Any Healthy Day

This article is written by a student writer from the Spoon University at Lafayette chapter.

Everyone knows breakfast is the most important meal of the day, and this avocado egg bowl recipe is a deliciously simple way to start the day off right.

Eggs are packed with the protein you need to fuel your body for the day, and avocados are known to be a superfood due to their high content of potassium, heart-healthy fats, and fiber. Baking avocados in eggs also eliminate the ordinary use of butter while cooking eggs.

Instructions

  1. Jodi Graf

    Preheat oven to 425°

Cut each avocado into two halves.

Take out the pits and scoop out more of the avocado centers to enlarge the cavity.

#SpoonTip: make the cavity larger than you would think or the egg whites will spill out of the avocado.

Crack an egg in the cavities of each of avocado halves then add salt and pepper.

  5. Jodi Graf

Put the avocados in a baking dish so they don’t fall over.

  6. Jodi Graf

Place in oven and bake for 15-20 min.

  7. Jodi Graf

    Eat and enjoy!

Topping Ideas
