While my family’s go-to food is usually Greek or American, we take every chance we have to try new foods out there and all have a favourite for when we’re feeling something different. For my mom, it’s Ethiopian food. For me, it’s Japanese food so that I can get some delicious Teriyaki chicken and rice. However, takeout can get pricey so I decided to try to make Teriyaki chicken and rice on my own.
First of all I had to figure out just what Teriyaki sauce was. Teriyaki sauce is a sauce made with soy sauce, mirin, sugar, and ginger. I had the rest of the ingredients on hand, but no mirin, so I looked into some other recipes and saw that it could be made without it. Because I often have little time to make dinner, I wanted to see if I could skip the marinade time and still have the chicken taste as good, which it did. Here’s my recipe for Teriyaki chicken and rice.

Cut the chicken into bite-sized pieces and season with salt and pepper to your liking.
Using a drizzle of vegetable oil, sauté the chicken in a pan over medium heat until no longer pink on the inside.
While the chicken is cooking, you can make the sauce. In a small bowl, combine soy sauce, brown sugar, ginger powder, and sesame seeds.
When the chicken has finished cooking, pour the sauce over the chicken. Stir often in order to avoid the chicken burning and to coat the chicken in the sauce as it thickens.
Remove the chicken from the pan and place over a bed of white rice. Feel free to pour the remaining sauce over the chicken and rice as well.
Teriyaki chicken and rice is always better with broccoli. If you desire, add some on the side.
This recipe doesn’t take long at all and it tastes heavenly. If you don’t have a rice cooker, don’t despair! There are other ways to make rice. Don’t love the teriyaki flavour?
