Preheat the oven to 375° and line a muffin pan with liners
Mix together the chia seeds and water, then set aside to set up
Mix together the melted coconut oil and maple syrup
Add the bananas and the chia seed mixture, mix well until combined
Add baking soda, baking powder, salt, cinnamon and water, then mix until combined
Mix the oats and flour together and add in the cashews
Pour the batter into the lined muffin pan
Bake for 20-25 minutes or until toothpick inserted in the center of the muffins comes out clean
