These Pumpkin Cheesecake Truffles Kick Traditional Pumpkin Pie to the Curb

With the holidays right around the corner, it’s the perfect opportunity to pass on the pumpkin pie this year and start some new traditions. Now, that doesn’t mean cutting out the pumpkin altogether; pumpkin cheesecake truffles are a quick and easy replacement that is sure to impress every guest sitting around the table.

Pumpkin Cheesecake Truffles

    Add 1 1/2 cups of vanilla wafers to blender or food processor and grind until fine. Pour into a large mixing bowl.

    In that same bowl, add 1/2 cup of pumpkin puree, 1 1/2 teaspoons of pumpkin pie spice, 1/4 cup of powdered sugar, and 6 oz of cream cheese.

    Mix all ingredients until combined.

    Add 1/2 cup of the melted white chocolate and mix again. Once combined, chill dough for 30 minutes.

    Form the chilled dough into small balls and place on wax paper.

    Microwave the remaining 4 cups of white chocolate for about 1 minute.

    Dip balled dough into melted white chocolate until evenly covered. Let dry until hardened (can stick into fridge to speed up process).
