How to Make a Blueberry, Feta and Caramelized Onion Pizza with a Crunchy Egg Roll Crust

    Preheat oven to 400 F. Stack two sheets of egg roll wrappers on a cooking sheet. Then repeat, but angling the second stack slightly so it resembles a star. Cook for 5-7 minutes, or until egg rolls are just golden brown.

    Thinly slice red onion. Heat the olive oil in a medium pan over medium low heat. Add the onions and cook until they are wilted, about 3-5 minutes. Then stir in the honey, letting the onions caramelize. Remove from heat.

    Mix feta cheese and ricotta, set aside.

    Spread cheese mixture over cooked egg rolls. Add blueberries and caramelized onions. Put back into oven for 10 minutes.
