This recipe for vegetarian beer chili is sure to please your beer-loving friends, vegetarian or not. So let this bad-boy simmer while you watch the game and it’ll be ready to eat by half-time.

#SpoonTip: This recipe can be made on the cheap. It features simple and inexpensive ingredients such as canned beans and tomatoes. Broke college students rejoice!

Vegetarian Beer Chili

    Chop celery, onion, green pepper and mince the garlic.

    Heat oil in a large soup pot. Add celery, onion, green pepper, and garlic. Cover and cook for about 10 minutes over medium heat until the vegetables are tender. Stir frequently.

    Add tomatoes, drained beans, raisins, red wine vinegar, chili powder, parsley, basil, oregano, cumin, allspice, honey, salt, pepper, and bay leaf and bring to a boil. Cover and simmer mixture for 1 1/2 hours. Stir occasionally.

    Now its time to add the beer to the chili. A bottle of quality dark beer compliments the flavors of the chili, but a can of your favorite college beer works too. Bring to a boil and simmer uncovered for 30 minutes.

    Once cooked to desired texture, remove bay leaf and add in the toppings. Stir in whole cashews to keep it vegan or top with grated cheese for a vegetarian option.
