Chai tea is one of my favorite drinks…ever. Nearly every school night—which, who am I kidding, every night is a school night when you go to my school—I make a nice, warm mug of chai. I always use a recipe adapted from what my mom taught me when I was younger.
Of course, there are countless other rockin’ recipes out there, but mine will always be my favorite. But in the end, cafés in NYC do it best, since they’re dedicated to the art of chai.
My absolute love for chai tea led me to grow a little curious. I spent a generous portion of my Saturday morning thinking, What else could I make with the most iconically-unique beverage I know of? Then I had the idea which will probably rock my entire future: chai tea truffles.
Let me be honest with you, this recipe actually did end up rocking my world. It would be a bit dishonest to say I ended up eating less than three of these bad boys. Read on if you want to embark on—or enhance, if you’re like me—your journey of chai tea lovin’.
Chai Truffle Balls

In a small pot over low heat, warm up the heavy cream. Add the black tea, cinnamon, cardamom, nutmeg, and ginger to create a chai tea infused mixture. Warm up until warmed through, about 10 minutes. Stir constantly to avoid boiling.
Pour chai tea mixture through a strainer into a heatproof bowl in a double boiler.
Add the chocolate and stir to melt and mix completely.
Remove chai tea truffle mix from heat. Be careful! The bowl will be hot. Pour the mix into a baking dish and spread evenly to allow for even cooling. Place into freezer to set, about 15 minutes.
Remove the chai tea truffle from the freezer. Scoop equal portions of the truffle and roll each scoop into a ball.
Place the chai tea truffle balls onto a sheet tray, and then into the freezer to set again.
Chai-Spiced Cocoa Coating

Instructions
Combine cocoa powder, cinnamon, and cardamom in a small bowl.
Add each truffle ball into the spiced mixture, and roll until completely covered. Tip: You can add multiple truffle balls to the mixture and shake the bowl from side to side to avoid getting your hands dirty.
