These Waffle Ice Cream Sandwiches Are a Spin on the Classic Summer Treat

Like most people, I hold a very special place in my heart for ice cream and, inevitably, ice cream sandwiches. I’ve also noticed this treat is becoming increasingly popular at restaurants as well. Personally, I find the traditional cookie and ice cream combination so boring. But waffle ice cream sandwiches? Now that’s interesting! Add in Oreos and you’ve got a winning summer treat.

You could easily use frozen waffles for this recipe, but I find it more fun if you make your own. The great part about these waffle ice cream sandwiches is that everyone can enjoy them. Finding a person who dislikes this interesting take on a classic is damn near impossible. I’ve even included a version without Oreos for friends who don’t like chocolate or can’t eat it. If you bring these to any summer hangout, you’re sure to be the life of the party!

Oreo Waffle Ice Cream Sandwich

Ingredients

Instructions

  1. Mix a package of your favorite waffle mix (or make your own from scratch). Pour the batter into a hot waffle maker and sprinkle crushed Oreos into the waffle. Cook for about 2 minutes.

  2. Freeze waffles overnight until waffles are firm.

  3. Once firm, take out two waffles. Scoop 4 scoops of vanilla ice cream onto the bottom waffle. Sprinkle crushed Oreos onto the ice cream, then use the top waffle to make a sandwich.

  4. Freeze sandwich for 3 or more hours.

Maple Pecan Waffle Ice Cream Sandwich

Ingredients

Instructions

  1. Mix a package of your favorite waffle mix (or make your own from scratch). Pour the batter into a hot waffle maker and add 1-2 tablespoons chopped pecans and 1-2 tablespoons maple syrup into the batter. Cook for about 2 minutes.

  2. Freeze waffles overnight until waffles are firm.

  3. Once firm, take out two waffles. Scoop 4 scoops of vanilla ice cream onto the bottom waffle. Sprinkle chopped pecans and pour syrup onto the ice cream, then use the top waffle to make a sandwich.

  4. Freeze sandwich for 3 or more hours.
