Up Your Breakfast Game with These Vegan Waffles

Donkey from Shrek said it best: "And in the morning, I'm making waffles!" However, sometimes it can be hard to make foods fit your plant-based diet. After a little trial-and-error, I've discovered that this vegan waffle recipe is better than the real thing and proves that being vegan doesn't mean giving up tasty breakfasts. The blog "Vegan Family Recipes" by Vanessa Croessmann inspired me to make my own version of these waffles (crazy toppings included, of course). These waffles are everything you could ever want: hearty, harm-free, and versatile.

#SpoonTip: Freeze any extra waffles in a Ziploc bag and reheat as needed.

Vegan Waffles

Ingredients
  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • 1 + 3/4 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 tablespoon coconut sugar
  • Pinch salt
  • 1 + 1/2 cup almond milk
  • 3 tablespoons melted coconut oil

Step 1

First you need to make your chia eggs! Do so by combining the chia seeds with the water in a bowl. Stir in the seeds and allow to sit for 10 minutes, or until most of the water is absorbed.

Preheat your waffle iron.

Combine the dry ingredients in a large mixing bowl.

Mix in the chia eggs and almond milk. After combined, add in the melted coconut oil (so it doesn't harden back up).

Pour the batter into your greased waffle iron. My waffle-stick maker takes about 4 minutes per batch of six sticks. Read your iron's instructions to learn more about cooking times.

Remove from iron and enjoy with all your favorite toppings! Some of my go-tos are peanut butter, maple syrup, berries, or vegan chocolate chips!

Substitutes

There are so many possible substitutions that allow you to completely customize these waffles to fit your liking. Here are a few of the versatile ingredients:

Chia Eggs: You can use flax seeds soaked in water or 2 pureed bananas instead!

Flour: Not a fan of whole wheat? Use all-purpose flour instead.

Sugar: Regular granulated sugar works as well.

Coconut Oil: Olive oil, canola oil, or melted margarine are also great vegan substitutes.

Almond Milk: Any other non-dairy milk such as soy, cashew, or coconut are great liquid bases.

With all these possible replacements you are guaranteed to be able to make these waffles anywhere anytime!
