Chicken salad is one of my favorite high protein healthy snacks to have on hand. I especially love these recipes because they all use Greek yogurt, which is a healthier, higher protein option than traditional mayonnaise. Chicken salad is a recipe that you can really personalize and have a lot of fun making – there is no right or wrong way to make it! It is especially great to do if you need to do a fridge clean out. These are my three favorite chicken salad variations. I love my classic chicken salad because it doesn’t have grapes or nuts like many traditional chicken salads have. I think apples are a great alternative because they are more crispy than grapes.The Buffalo chicken salad really gets me in the fall spirit, you can even spice it up with ranch seasoning or even adding bacon! The dill pickle one is so good and simple, a great variation for all my fellow pickle lovers.

Base Chicken
- Preheat oven or air fryer to 400°F.
- Season chicken with olive oil, garlic powder, salt, and pepper.
- Place on a baking sheet and bake for 20–25 minutes, or until the chicken reaches 165°F.
- Let cool, then shred the chicken and divide evenly into 3 bowls.
- Add Greek yogurt, pickle juice, Dijon, garlic powder, and black pepper to a bowl. Mix.
- Add chicken, pickles, celery, and dill.
- Stir until evenly coated.
- Taste and add more pickle juice or dill if needed.
- Whisk together Greek yogurt, Dijon, lemon juice, salt, and pepper.
- Add chicken, apple, celery, and red onion.
- Fold everything together until evenly coated.
- Taste and adjust seasoning.
- Whisk together Greek yogurt, Buffalo sauce, and lemon juice.
- Add chicken, celery, carrot, and red onion.
- Gently fold everything together.
- Taste and adjust seasoning.

- Depending on how wet or dry you like your chicken salad, you can add more or less Greek yogurt to reach your desired consistency.
- To make this recipe even easier, buy pre-shredded rotisserie chicken.
