This Peanut Butter and Jelly Tiramisu Gives Sandwiches a Run for Their Money
All throughout elementary school, my go-to lunch consisted of peanut butter and strawberry jelly sandwiched in between two pieces of white bread. If my mom was feeling up to it, the crust would even be taken off for me. However, while those days of sandwiches are long gone, the flavor profile of peanut butter and jelly still remains in a special place in my heart.
In order to revamp the flavor combination of the salty nut spread and sweet jam, I have created an elevated, more "adult" way to eat the flavors of my beloved childhood sandwich. Let me introduce: peanut butter and jelly tiramisu. It sounds crazy, but have faith. I used inspiration from this typical Italian dessert, and made it my own mouthwatering invention by changing the Lady Finger soaking liquid and adding peanut butter to the mascarpone cream.
It's a super easy, no-bake dessert that's perfect for any age. Thanks to the fresh fruit and whipped mascarpone, it's surprisingly light, making it the perfect summer dessert. But that doesn't mean you won't be wanting to have it all year round.

Ingredients
- 1 cup smooth peanut butter
- 8 ounces room temperature mascarpone
- 1 1/2 cups room temperature heavy whipping cream
- 1/2 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 packages Lady Fingers
- 1/2 cup seedless strawberry jelly
- 1/2 cup water
- 2 cups fresh strawberries

This peanut butter and jelly tiramisu is super simple to make and has excellent flavor. The combination of the sweet and salty layers work perfectly together. Although you'll have to wait awhile for the dessert to set, it will definitely be worth it in the end.
