This Peanut Butter and Jelly Tiramisu Gives Sandwiches a Run for Their Money

All throughout elementary school, my go-to lunch consisted of peanut butter and strawberry jelly sandwiched in between two pieces of white bread. If my mom was feeling up to it, the crust would even be taken off for me. However, while those days of sandwiches are long gone, the flavor profile of peanut butter and jelly still remains in a special place in my heart.

In order to revamp the flavor combination of the salty nut spread and sweet jam, I have created an elevated, more “adult” way to eat the flavors of my beloved childhood sandwich. Let me introduce: peanut butter and jelly tiramisu. It sounds crazy, but have faith. I used inspiration from this typical Italian dessert, and made it my own mouthwatering invention by changing the Lady Finger soaking liquid and adding peanut butter to the mascarpone cream.

It’s a super easy, no-bake dessert that’s perfect for any age. Thanks to the fresh fruit and whipped mascarpone, it’s surprisingly light, making it the perfect summer dessert. But that doesn’t mean you won’t be wanting to have it all year round.

  1. Marisa Palace

    In a small sauce pan, heat up strawberry jelly, water, and granulated sugar on medium low heat for 5-7 minutes, or until the mixture is homogeneous.

    With an electric mixture, whip together mascarpone, sugar, and half of the cream on medium speed until it is light and fluffy. Add in the rest of the cream, peanut butter, and vanilla and beat once again on medium speed until everything is incorporated and airy.

    #SpoonTip: Be sure to not over mix it. If you happen to, the mixture will become grainy.

  3. Marisa Palace

    In an 11 by 7 inch sized pan, pour 2 tablespoons of the jelly liquid in the bottom on the pan. Dip Lady Fingers in the jelly mixture until an even layer is formed and place 1/2 of the peanut butter cream on top.

    Dip the second layer of soaked Lady Fingers in the pan. To finish the layering process, add the rest of the cream, and lay down thinly sliced strawberries. Brush the strawberries with the remaining jam mixture.

    Allow the tiramisu to chill for a minimum of 8 hours to allow the Lady Fingers to absorb the liquid and soften. Enjoy!

This peanut butter and jelly tiramisu is super simple to make and has excellent flavor. The combination of the sweet and salty layers work perfectly together. Although you’ll have to wait awhile for the dessert to set, it will definitely be worth it in the end.
