On my adventures trying the best kosher ice cream in NYC, I tried what I now consider one of my most favorite ice cream flavors of all time: Pancake Chip. This ice cream literally tastes like chocolate chip pancakes, aka my go-to pancake breakfast, and all I want to know is why the flavor is still not sold in grocery stores. (You reading this, Ben & Jerry's?)

In the meantime, I found a way to make my own version of Pancake Chip ice cream at home. No lie, this homemade version tastes just like chocolate chip pancakes, too. Plus, it includes bananas—because banana chocolate chip pancakes are undeniably way better.

Banana Pancake Chip Ice Cream

    Ingredients

  • 2 cups heavy cream
  • 1 14 oz sweetened condensed milk
  • 1/2 tbsp maple syrup
  • 1 tbsp vanilla extract
  • 1 cup mini chocolate chips
  • 2-4 pancakes
  • 1 ripe banana

  • Step 1

    Pour the sweetened condensed milk, vanilla extract, and maple syrup all in a large bowl. Stir all these ingredients together until combined.

    In a separate bowl, pour the heavy cream. Mix with a hand mixer for 5 minutes until stiff peaks form.

    Add the whipped cream to the condensed milk mixture. Stir the mixtures together until fluffy.

    Chop up the pancakes and mash the banana. Add both ingredients to the mixture.

    Blend the chopped pancakes and mashed bananas into the mixture with a hand mixer.

    Pour the mini chocolate chips into the mixture and fold the chips in.

    Transfer the mixture into a tin pan and seal with plastic wrap. Leave in the freezer for 8 hours.

    Take the tin out of the freezer. Scoop your ice cream into a cone or cup, and prepare for your tastebuds to go bananas!
