Plus, I've never met a person who doesn't like nachos, so they're great to make for any event. Adding some chicken to your nachos not only puts some protein in the mix, it also makes the nachos infinitely better because chicken and cheese are a perfect pair.

Why else would we have so many amazing creations like chicken quesadillas? These easy chicken nachos will be ready in just 15 minutes and fill the hearts and stomachs of anyone who may be coming over.

    Ingredients

  • 4 Cups tortilla chips around 40-50 chips
  • 1 Tablespoon taco seasoning
  • 4 Cups shredded mexican blend cheese
  • 2 Cups sweet corn
  • 2 Cups pinto beans
  • 2 Cups Rotisserie Chicken cut into small bite-sized pieces

  • Step 1

    Preheat the oven to 400° Fahrenheit. Add the chips to the dish you're going to bake them on. If you have an oven-safe dish that you'd like to serve them on, that would be easiest. However, you can always transfer later.

    Add the taco seasoning and half of the cheese on top of the chips. Some people like to have all of their chips covered, but I like to leave a few on the outside for those who like to grab a fresh chip and dip into the rest.

    Add the corn and pinto beans on top of the cheese. If you place them in areas where there isn't any cheese, they won't stay in place very well and it will make your nachos much messier than nachos already are.

    Cover the pinto beans and corns with the rest of the cheese to ensure they stay in place once the cheese melts. Plus, this way they're perfectly coated in cheese on every side. And we all know cheese is the best part of nachos.

    Add the rotisserie chicken to the top. Since it's the star ingredient it should be the most visible (some of us would still argue that cheese is the star, but that's always visible).

    Bake in the oven for 10 minutes, enough time to allow both the cheese to melt and the chicken to warm. Nobody wants cold chicken with their melted cheese.

    If necessary, transfer to a new dish. I did so using a spatula, but this won't work as well for larger batches. While it may not look exactly the same as it did when you laid it out, it will still be delicious. You can also just serve it on the sheet pan, if you like.

As I said, the best thing about these easy chicken nachos is that they're fully customizable. Feel free to take away any ingredients you don't like and to add any that you do. If you want 6 cups of cheese instead of 4, go for it. Follow your heart and you'll end up with the best nachos you've ever had.
