These Banana Bomb Cookies Explode with Flavor

Banana bomb (noun): an explosion of banana, love, and chocolate in your mouth. You MUST eat more than one, and you easily can because they’re super healthy and give you lots of energy.

I give you permission to stuff your face with them.

I love making these for events where lots of hungry people are present, such as sporting events or parties. They make a great breakfast, lunch (I've had 8 banana bombs as lunch before #oops), snack, or dessert. They're like banana bread and oatmeal combined into one portable treat. They contain only healthy, natural, great-for-you ingredients. And chocolate, but chocolate is good for your soul. 

Believe it or not, I submitted this recipe into a local recipe contest this past year and got the honorable mention for them! So the jury even agrees that these bombs are, well, bomb.

If the above reasons don’t make you want to eat some banana bombs, I don’t know what will. 

Banana Bombs

Ingredients
  • 2 peeled ripe bananas
  • 1 cup dates
  • 1/4 cup melted coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 cups oats
  • 1 cup chocolate chips

Step 1

Preheat the oven to 350°F. Blend together everything except the oats and chocolate chips in a food processor.

Add 1 ½ cups of oats and pulse in the food processor for 5 seconds.

Take out the food processor blade, and mix in the remaining oats and the chocolate chips.

Step 4

Scoop onto a cookie sheet with a cookie scoop or a spoon and bake for 13 minutes. Let cool for 5 minutes, then enjoy!

If you don’t like bananas, then these babies are probably not for you. I feel bad for you because you’re definitely missing out. For those of you who do like bananas… prepare for Banana Nirvana.
