The Best Coconut Recipes To Just Fall Out Of A Coconut Tree

Current Vice President Kamala Harris has completely taken over my TikTok For You Page. For months, people have observed Harris’ often rambly answers to interview questions. This has only been exacerbated by Joe Biden’s departure from the 2024 Presidential Race. More and more it’s looking like Harris will be the Democratic nominee, which has only fed social media’s obsession.

Her most popular meme comes from May 2023, when she spoke at the swearing-in ceremony of commissioners for the White House Initiative on Advancing Educational Equity, Excellence, and Economic Opportunity for Hispanics. She made what is honestly a deeply resonant statement on how we all “exist in the context of all in which you live and what came before you,” and younger generations can look to their relatives for assistance with their problems. The meme, though, came from Harris quoting her mother, saying, “You think you just fell out of a coconut tree?” So in the spirit of Harris herself, here are seven of the best coconut recipes for whenever you are thinking about your own context.

1. Coconut Mango Terrazzo Pie

Creator @easygayoven on TikTok promises that this recipe isn’t inspired by any particular meme going around at the moment, but it’s making this list anyway! The pie is named after terrazzo stones, which have little specks of different colored rocks within it, like a stained glass window. The pie itself is coconut, with mango jelly pieces throughout that recreate this stone and give you a gorgeous end product.

2. Blended Coconut Latte

Coming from one of my favorite TikTokers, we have Dr. Natalya’s Blended Coconut Latte. Dr. Natalya is constantly pushing back against some of the toxic beauty standards amongst influencers, so this indulgent latte doesn’t shy away from any sugars or syrups. This is an incredibly refreshing way to start any morning!

3. Coconut Rice

Spoon University writer Daniela Rico honored her dad by sharing his coconut rice recipe with all of our readers, and I had to share it again. Specifically, the recipe came from Rico’s own love for Almond Joys, crafting a delightfully sweet and salty take on Coconut Rice, with shredded almonds mixed in.

4. Coconut Cloud Smoothie

This recipe is a take on LA grocery store, Erewhon’s, own Coconut Cloud Smoothie. However, TikTok user @callmecandance.tv made it specifically for herself and other people who also struggle with PCOS. While the recipe itself calls for many fancier ingredients, the end result is just as pretty as your typical Erewhon shake!

Coconut macaroons are one of my favorite sweet treats, so finding out they can be made with just two ingredients? Well I know what I’m making right after writing this roundup. All you need is shredded coconut and sweetened condensed milk, and you can have your very own high-end treat.

6. Coconut Jelly

I’ve never tried jelly of any kind before, but as someone who used to watch the anime The Disastrous Life of Saiki K, I’m very familiar with coffee jelly. It’s always looked so appetizing in the show, and this coconut jelly is no different. While perfecting the right texture can be a bit tricky when first trying the recipe, once you get the hang of it, your fridge is sure to be full of containers of settling jelly!

7. Coconut Lemon Tahini Curry

Last but not least, I had to include a curry on this list. This recipe is great for those with an adventurous palate, but limited budget, with many easily accessible Trader Joe’s ingredients. Once you’re done with the curry itself, you can throw it over any carb you want — perfect for meal prepping!
