Ah, pesto. The one green thing most everyone seems to love. But typical pesto is limited to just one green: basil. And while that’s a tried and true classic, pesto can be made out of any greens; carrot, beet, spinach, mint, parsley, kale. The basic formula for any pesto is greens, olive oil, lemon, nuts, and salt and pepper, so that leaves so many opportunities for experimentation! This particular recipe uses beet greens, which lends a subtle bitterness that basil pesto lacks, and two special ingredients: hemp seeds and pumpkin seeds. The hemp seeds provide all nine essential amino acids and a protein boost, while the pumpkin seeds bring a diverse array of antioxidants to the table (and your body).
