These Homemade Shortbread Cookies Are Ridiculously Buttery

When I think about winter, I think about the first snow fall, twinkle lights on trees, winter jackets, hats, scarves, and most importantly I think about cookies. Baking cookies, eating cookies— for me, cookies define the winter season.

When the weather starts to get cold, my father and I head to the kitchen and make these shortbread cookies together. Although shortbread is a classic Scottish dessert dating back to medieval times, its flavor continues to bring joy to people today.

Although an excellent choice when cozying up by a fire on a cold winter's day, shortbread cookies shouldn't just be eaten in the winter. Serve these cookies to both your friends and family, and you're guaranteed to make some people drool. I mean, who doesn't want a buttery and delicious dessert to get you through the winter?

Shortbread Cookies

Ingredients
  • 1 cup Irish butter
  • 1/2 cup granulated sugar
  • 2- 2 1/2 cups all-purpose flour
  • 1/2 cup rice flour
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt

Step 1

Gather all materials and ingredients. Set oven to 325°F.

Cream Irish butter until the texture is fluffy.

Sift the sugar.

Cream butter and sugar together until sugar is evenly spread throughout the creamed butter.

Sift both all-purpose flour and rice flour together.

Add flour to creamed butter and sugar.

Add vanilla and salt into creamed butter, sugar, and flour.

Blend together until texture resembles crumbly small pebbles.

Knead dough. Then, gently roll out the dough until 1/2 inch thick in between 2 sheets of parchment paper. Avoid handling too much.

Use circular cookie cutter to cut the dough.

Using a fork, poke tiny holes into each cookie. Place cookies on a cookie sheet and place in oven for 20 minutes until golden on top.
