Plain Grilled Cheese Is So Last Year — Make Pickle Grilled Cheese Instead

The following recipe for Pickle Grilled Cheese is from Grillo’s Pickles’ cookbook, “Grillo’s Presents PICKLED: 100 Pickle-Centric Recipes to Change Your Life.” It’s available for purchase on Abrams, Amazon, and at your nearest bookstore.

Grilled cheese sandwiches are go-to sandwiches that can be amplified with just about any ingredient — bacon, tomatoes, pesto, apples, and pickles. Yes, pickles. Pickles will add a salty crunch to your grilled cheese that complements whatever cheese you’re using. As Justine Snacks noted during her quest for the perfect grilled cheese, softened butter in a cast iron skillet makes the best-grilled cheese. But mayo also works.

Who knew that adding pickles to a grilled cheese would be such a game-changer? Well, Grillo’s Pickles did actually.

Instructions

  1. In a bowl, stir together the butter and Cheddar. Season with salt and pepper and set aside. Build each sandwich with a schmear of the butter-cheddar mixture on the inside of both slices of bread, American cheese, and 3 Sandwich Makers. Close the sandwiches.
  2. Preheat a nonstick pan over medium heat. Sear each sandwich until golden brown on both sides, about 3 minutes per side. Make sure to clean your pan between searing. Cut on a diagonal and enjoy.
