After a long time spent hunting for a vegan pancake recipe that was easy and called for simple ingredients that I already had on hand, I came across this one and decided to give it a try. I soon discovered that banana oat pancakes are awesome and full of potential, so I looked for even more ways to spice them up a little. Depending on how much time you have and which ingredients you have on hand, you can decide which version of the recipe you want to use.
No matter which one you choose, these quick and satisfying pancakes are perfect for every occasion from lazy Sunday brunches to quick weekday morning breakfasts before class.
The Classic
Ingredients
Instructions
Place oats, milk, and banana in blender.
Blend until very smooth.
On medium heat, pour equal amounts of batter into a dry or oiled pan. Cook until small bubbles appear or the batter settles, and then flip. Remove from heat when cooked through.
#SpoonTip: To check if the pan is hot, splash some water on it and see if it sizzles.
Smother in maple syrup and enjoy.
Double Chocolate

Place oats, milk, and banana in blender and blend until smooth.
Stir chocolate chips into batter (you can do this in the blender).
On medium heat, pour equal amounts of batter into a dry or oiled pan. Cook until small bubbles appear or the batter settles, and then flip. Remove from heat when cooked through.
While the pancakes are cooking, stir together cocoa powder, sugar, and water in a small bowl.
Drizzle chocolate sauce over pancakes and enjoy.
Blueberry Lemon Poppyseed

Grate lemon zest and set aside.
Place oats, milk, banana, and lemon zest in blender and blend until smooth.
Stir poppy seeds and half the amount of blueberries into batter.
On medium heat, pour equal amounts of batter into a dry or oiled pan. Cook until small bubbles appear or the batter settles, and then flip. Remove from heat when cooked through.
Place the rest of the blueberries in a microwavable bowl.
Microwave the blueberries until hot and soft, then drain out some of the liquid and mash with a fork to make a blueberry compote.
When the pancakes are ready, pour on the blueberry compote and enjoy.
